Recipe of the week:

Black Bean and Mango Salsa

This sweet and savory side is great with chicken, pork, or almost any fish. It’s a breeze to make and adds a big south-western punch of flavor to any meal. Pair the beans with some rice to get a complete source of protein for the day and help cut down on the fat.If mangos aren’t available try using pineapple or papaya. Juice one lime to really make this dish shine. 

Servings: 4

Total Time: 10mins. 

  • 1 ripe mangoes , diced

  • 1 can (15 oz) black beans , rinsed and drained

  • 2 green onions , chopped

  • 1 clove garlics , peeled and finely chopped

  • 1/2 tsp crushed red pepper

  • 1/4 tsp salt

  • 1/4 tsp black pepper

 

Instructions:

Combine all ingredients and let sit for 30 minutes before serving.
